The big chains put their fall menus out in August in 2026. Dunkin' launched its pumpkin lineup, led by the Pumpkin Spice Signature Latte, on August 19. Dutch Bros followed on August 21, and Starbucks brought back the Pumpkin Spice Latte on August 25.
What the chains added
Starbucks' new pumpkin drinks for 2026 are the Iced Pumpkin Cream Shaken Espresso, the Pumpkin Spice Chai and the Iced Pumpkin Cream Matcha. Pumpkin Cream Cold Brew, Iced Pumpkin Cream Chai and the Pumpkin Spice Frappuccino returned, and the menu also added a banana bread flavored latte and a chai and cider drink called the Chaider.
Dutch Bros brought back its Caramel Pumpkin Brûlée and Cookie Butter drinks and added one new flavor, Autumn Berry.
The PSL, by the dates
Starbucks first sold the PSL in 2003, and it has been the chain's best-selling seasonal drink since. The original recipe had no pumpkin in it. In August 2015 Starbucks added real pumpkin and removed caramel coloring and artificial flavors.
Why spice and caramel taste sweet
Smell changes how sweet a drink tastes. In a 1999 study in Chemical Senses, Richard Stevenson, John Prescott and Robert Boakes added 20 different odors to sugar solutions. The more an odor smelled sweet on its own, the sweeter it made the solution taste. Caramel, the sweetest-smelling odor in the test, raised the perceived sweetness of sugar and lowered the perceived sourness of citric acid.
That helps explain why a caramel or spiced latte can taste sweeter than its sugar content suggests. It also means the syrup can cover a sour or thin espresso shot.
Reading a maple label
Maple lattes depend on the syrup. Under the USDA grade standards in effect since 2015, Grade A maple syrup comes in four color classes, each with a flavor descriptor: Golden with delicate taste, Amber with rich taste, Dark with robust taste, and Very Dark with strong taste. Real maple syrup carries one of those grades. "Maple flavored" syrup is a different product, so ask which one the café uses.
How to judge a fall latte
Taste the espresso first if the café will pour you a small sample, since syrup and spice aromas can hide a poor shot. Ask whether the sauce or syrup is made in-house and what's in it. Rate the drink within the season, because recipes change from year to year, and a score from last October may describe a different drink.
